Chipotle Tuna Rice and Black Bean Skillet
1 (8 ounce) box Rice and Black Bean Mix
1 tablespoon chipotle chili powder
¼ teaspoon cayenne pepper or hot sauce
1 lime cut into 4 wedges
4 (5 ounce) cans tuna packed in water, drained and flaked
¼ cup green onions, coarsely chopped
3 tablespoons fresh cilantro, chopped
1) Follow instructions on box to make rice and beans, adding the chipotle powder and cayenne pepper (and hot sauce, if using).
2) Squeeze half the lime onto the cooked rice and beans. Stir in tuna.
3) Serve in deep bowls. Garnish with remaining lime wedges, green onions and cilantro.
