Tuna and Biscuits
9 ounces nonfat cream cheese, softened
3 tablespoons butter, softened
1 ½ teaspoons dried basil
1 teaspoon salt
½ teaspoon freshly ground pepper
1 (10 ounce) package frozen vegetable medley (cauliflower, carrots and broccoli)
4 (5 ounce) cans tuna packed in water, drained
2 cups biscuit/baking mix
2 teaspoons dried basil
⅔ cup skim milk
1) Preheat oven to 350˚. Place cream cheese, butter and basil in a 2-quart casserole. Mix thoroughly. Stir in salt, pepper, vegetables and tuna.
2) In a mixing bowl, combine biscuit ingredients and mix well with a fork to form dough. The dough will be slightly sticky. Using a damp spoon, drop 12 spoonfuls of dough for the biscuits on top of tuna casserole mix.
3) Place casserole in 350˚ oven and bake uncovered for 30 minutes, or until a toothpick inserted into a biscuit comes out clean.
